Sweet and crunchy! Perfect with fruit and yogurt! 1 serving is half a cup.

Recipe Ingredients for Amazing Granola

3 cups oatmeal, old fashioned
1 cup coconut, unsweetened
1/2 cup ground flaxseed
1/2 cup walnuts
1/2 cup almonds
1/2 cup Pepitas
1/2 cup raisins
1/2 cup dried apricots
3 tbsp brown sugar
2 tbsp vegetable oil
1/3 cup honey
1 tbsp cinnamon
2 tsp vanilla

Recipe Directions for Amazing Granola

  1. Preheat oven to 300.

  2. Combine oatmeal, flax, coconut, cinnamon, brown sugar, and nuts. In small saucepan, combine oil, honey and vanilla and heat gently without boiling until well combined. Stir into oatmeal mixture and mix well.

  3. Place onto parchment paper lined cookie sheet. Spread into fairly even layer.

  4. Bake 40 minutes, stirring every 10 minutes.

  5. When toasted, remove from oven and cool on wire rack on cookie sheet.

  6. Once cooked, break up. Mix in dried fruit. Store in air tight container. Lasts about 2 weeks for me.
