My family loved these. Next time I might add more oats and less flour.

Recipe Ingredients for Amazing Banana Oat Muffins

1 1/2 c Flour
1 c Rolled oats
1/3 c Sugar
2 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
1 Egg
1 egg white
3 tbsp Canola oil
1/3 cup 1% low-fat milk
1 cup Mashed banana

Recipe Directions for Amazing Banana Oat Muffins

  1. In a large bowl measure dry ingredients. Stir to mix. Make a well in center.

  2. In a small bowl beat eggs until frothy. Mix in oil, milk and bananas. Pour into well.

  3. Stir just until moistened. Batter will be lumpy.

  4. Fill muffin cups 3/4 full.

  5. Bake at 400 degrees for 20-25 mins.
