I came up with this recipe one night when I had to get rid of a plantain.

Recipe Ingredients for AMAZING Baked Sweet Plantains

164 g plantain, over-ripe
2 tsp vegetable oil
1 tsp brown sugar
1/8 tsp chili flakes
1/4 tsp cinnamon

Recipe Directions for AMAZING Baked Sweet Plantains

Preheat oven to 400F. Slice plantain into 1/2? diagonal slices. Arrange evenly on a baking sheet. Splash with oil and sprinkle with the brown sugar, chili and cinnamon. Bake for about 20 minutes or until dark brown and crispy, turning once. To serve, top with yogurt and extra cinnamon.
