Recipe Ingredients for Amazing Avacado Bread

2 cups whole-wheat pastry flour
3/4 cup Splenda
3/4 teaspoon baking soda
1/2 teaspoon salt
2 ripe avocados, peeled, pitted and mashed
2 large eggs
1/2 cup nonfat plain yogurt or buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract

Recipe Directions for Amazing Avacado Bread

  1. Preheat oven to 350F. Lightly coat bottom of 9x5-inch loaf pan with cooking spray.

  2. In large bowl, combine flour, sugar substitute, baking soda, and salt. In medium bowl, whisk avocados, eggs, yogurt, oil, and vanilla. Lightly fold avocado mixture into dry ingredients until just combined. Batter will be thick and chunky.

  3. Pour batter into pan. Bake 40 minutes, until golden and toothpick inserted in center comes out clean. Cool in pan 5 minutes, then transfer to wire rack. Store leftover bread tightly wrapped at room temperature.
