Recipe Ingredients for Amaranth Salad

1/2 cup cooked amaranth
1/2 red bell pepper
1/2 cup swiss chard
1/2 cup kale
1/3 cup chopped green onion
1/2 cup broccoli
1 tsp olive oil
1/2 tsp chili powder
2 tbsp low sodium beef broth

Recipe Directions for Amaranth Salad

  1. Heat a pan with the olive oil.

  2. Add broccoli first, cook for 2 minutes.

  3. Add the rest of the veggies, cook until not quite done so they're still mostly crispy.

  4. Combine with the amaranth, add chili powder.
