Recipe Ingredients for Amaranth Blueberry Muffins

1 3/4 cup Amaranth Flour
1/2 cup Arrowroot Flour
3 tsp Calumet Baking Powder
3 tsp Calumet Baking Powder
1/4 tsp Cinnamon, Ground
1/4 tsp Cloves, Ground
1 can (6 fl oz) Apple Juice, Frozen Concentrate, Unsweetened, Undiluted
1/4 cup Olive Oil
1 cup Frozen Blueberries
3/4 cup (not packed) Raisins, Seedless

Recipe Directions for Amaranth Blueberry Muffins

  1. preheat oven to 375.

  2. Line muffin tins

  3. mix amaranth and arrowroot flours with baking powder

  4. Stir in dried fruit if using

  5. Add oil to apple juice concentrate

  6. pour liquids into dry ingredients

  7. Stir til just mixed

  8. Add frozen fruit, if using

  9. Batter will be stiff. Spoon batter into prepared muffin tins, filling about 7/8 full.

  10. Bake 15-20 minutes till toothpick inserted comes out dry.
