Recipe Ingredients for Amanda's homemade meatballs

2 1/2 lb. Lean ground beef
3 cloves garlic
2 1/2 oz. Cheddar cheese
1/2 small yellow onion
2 tablespoons Italian seasoning
1 teaspoon oregano
1/2 teaspoon ground pepper
1/2 teaspoon kosher salt
4 slices whole wheat bread
1/2 cup beef broth
2 eggs

Recipe Directions for Amanda's homemade meatballs

  1. Shred cheese finely.

  2. Chop onions finely.

  3. Mince garlic.

  4. Mix all ingredients except bread and broth.

  5. Toast the bread on lightest setting twice. Chop in Tupperware quick chef or food processor until fine crumbs. Then mix into meat mixture.

  6. Pour broth in slowly, a couple tablespoons at a time, until the mixture is soft and sponge like but hold ball form.

  7. Use a roaster pan or a cookie sheet with a wire rack to bake the balls. Form into 1 to 1.5 inch diameter balls and line up on the racks on the pan. Done neatly and setting them close, you should be able to fit 30to 32 on your pan. This recipe yields 32 medium-large balls, and there are 4 per serving when 32 are made.

  8. Bake at 350 degrees for 25 to 30 min.
