Sweet, simple and filling. These high fiber/high flavor muffins are an excellent addition at breakfast or a quick, energy packed snack.

Recipe Ingredients for Amanda's blueberry bran muffins

1 cup all-bran cereal
2 cups wheat bran
3 tbsp wheat germ (optional)
1 cup water, boiling
1/3 cup sugar, granulated
1/2 cup unsweetened applesauce
2 eggs
2 tbsp vegetable oil
2 cups 1% milk
2 1/2 cups whole wheat flour
2 tsp baking soda
1 tsp baking powder
1 cup blueberries

Recipe Directions for Amanda's blueberry bran muffins

  1. Preheat oven to 375 F

  2. Combine all-bran, wheat bran and germ in a bowl. Add the boiling water, stir, and let stand until softened.

  3. In a mixing bowl whisk together eggs, oil, sugar and applesauce.

  4. Add milk, dry ingredients, and bran mixture.

  5. Stir just until combined.

  6. Fold in blueberries.

  7. Divide among lined muffin tin.

  8. Bake for about 20 mins until golden brown on top and toothpick inserted into the center comes out clean.

  9. Cool and enjoy.
