Chickpeas and potatoes in Indian spiced sauce

Recipe Ingredients for Alu Chole Masala

2 tbl vegetable oil
29 oz diced tomatoes
31 oz chickpeas, low sodium
3/4 cup onion, chopped
16 oz potatoes, cubed and boiled
1/4 tsp salt

Recipe Directions for Alu Chole Masala

  1. Heat oil in medium pan. Add chopped onion and 1 tbl Masala spice mix (Kalustyan's) and saute for 1 minute. Add tomatoes and 3 more tbl spice mix. Stir and simmer for 10 minutes.

  2. Add chickpeas and boiled potatoes. Stir and cook for 15-20 minutes.

  3. Serve with rice and a dollop of yogurt.
