Recipe Ingredients for Alton Brown's Vegetable soup

10 serving Vegetable Broth
2 cup Leeks, (Bulb And Lower Leaf-portion)
1 NLEA serving Carrots, Baby
1.5 cup Beans, Snap, Green
1.5 cup Great Northern Beans
1 cup Corn, Sweet, Yellow
1 large (3" to 4-1/4" dia.) Potatoes, Boiled
5 serving Hot Chili Sauce
2 cup Tomatoes, Red, Ripe
1.058 oz Extra Virgin Olive Oil
2 cloves, raw Garlic
2 serving Coarse Kosher Salt
10 grams Bay Leaves
1 tsp, leaves Thyme, Dried
1 tsp Spices Oregano Leaves
1 tbsp, leaves Basil, Dried

Recipe Directions for Alton Brown's Vegetable soup

  1. Chop leeks (white and light green portions), garlic, carrots, green beans, tomatoes, dice potatoes.

  2. Heat olive oil in big soup pot.

  3. Sauté leeks and garlic for 4-5 minutes (add a couple of pinches of salt).

  4. Then add carrots, green beans, potatoes, continue to mix periodically and sauté for about 4-5 more minutes. Add cut up tomatoes and stir and saute some more (1-2 minutes).

  5. Then add 2 boxes swan son's vegetable broth ( 1 box veg. Broth , 1 box chicken broth). Bring to a simmer (important).

  6. Add basil, thyme, oregano (I forgot add the 2 bay leaves when you are sauteing the leeks and onions.

  7. Add the beans (drained and rinsed before adding), the drained corn, the reserved liquid from the 28 oz can of tomatoes, return to a simmer.

  8. Cook 20-25 min. Remove from heat, use an immersion blender and semi blend the soup so that the beans, potatoes, tomatoes are somewhat purred.

  9. Add the sriacha, salt to taste. Add 2 tbsp lemon juice. Stir.
