Recipe Ingredients for Alton Brown's Protein Bars

8 oz whey protein powder
2 1/4 oz rolled oats or oat bran
2 3/4 oz whole wheat flour
2 tbsp flaxseeds
1/2 tsp kosher salt
3 oz raisins
2 1/2 oz dried cherries
3 oz dried papaya
1/2 cup cranberry juice or apple juice
12 oz pumpkin or soft silken tofu
4 oz dark brown sugar
2 large whole eggs, beaten
2/3 cup peanut butter
1 tsp Canola oil or Pam for pan

Recipe Directions for Alton Brown's Protein Bars

  1. Line the bottom of a 13x9-in glass baking dish with parchment paper and lightly coat with canola oil. Set aside. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, combine the protein powder, rolled oats [or 2.25oz oat bran], wheat flour, flaxseeds, and salt. Set aside. if you'd like, add in 3/4 oz wheat germ for extra nutrition...

  3. Coarsely chop the dried fruit [Alton calls for about 3 oz of the following: dried cherries, dried blueberries, apricots, and raisins...I just used what I had..] and place in a small bowl. Set aside.

  4. In a 3rd mixing bowl, whisk the tofu/pumpkin until smooth. Add the apple/cranberry juice, brown sugar, eggs, and peanut butter, one at a time, and whisk to combine after each addition. Add protein powder mixture and stir well to combine. Fold in the dried fruit. Spread evenly in the prepared baking dish and bake in the oven for 35 min or until the internal temperature reaches 205 degrees F. Remove from the oven and cool completely before cutting into squares. Cut into squares and store in an airtight container for up to a week.
