I made some small modifications - ignore the tomatoes quantity - this was necessary to get the calories up to the proper amounts. I had a 32 oz container of low sodium beef stock, and had no use for the additional 8 ounces so I tossed in the extra. I also increased the barley from .5 cups to 1.5 cups, to make it more hearty. You can use all dried herbs, but I felt the fresh thyme really added that something extra.

Recipe Ingredients for Alton Brown's Beef and Barley Stew

1 pound stew beef
60 ounces Tomatoes, Crushed
4 cups beef Stock
1 1/2 cup pearl barley
27 baby carrots
2 stalks celery
1 large Potato
1 medium yellow onion
1/2 teaspoon fresh thyme
1/2 teaspoon dried rosemary
1/2 teaspoon dried marjoram
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Recipe Directions for Alton Brown's Beef and Barley Stew

  1. Brown the beef in the pressure cooker over high heat, 5 to 7 minutes. Drain off any fat. Add the tomatoes, broth and barley and return to high heat. Close the pressure cooker and bring to up to full pressure. Reduce the heat until the cooker barley hisses, and cook for 10 minutes.

  2. Release the pressure using the cooker's release device (read the manual), or cool the cooker by running cold water over the lid for 30 seconds. Open carefully, remove the lid and add the vegetables, herbs, salt and pepper.

  3. Put the lid back on the pressure cooker and heat to full pressure over high heat. Reduce the heat to maintain pressure and cook another 10 minutes. Release the pressure as above. Remove the lid and cool for 5 minutes, and then serve with vinegar (Malt, Balsamic - optional)

  4. [I used a braising pan for all of this, as I do not have a pressure cooker - if you do the same, you may find that you need to stir frequently, or you can scorch the soup.]
