Recipe Ingredients for Alternative Picadillo

1 3/10 pounds ground turkey breast, 99% fat free
1 medium onion, chopped
1 small green pepper, diced
1 small red pepper, diced
1 large carrot, diced or grated
2 cloves (large) raw garlic, minced
30 oz. diced tomatoes
3/4 cup olives
3/4 cup raisins, chopped
1 tablespoon capers, nonpareil
1 tablespoon dry cooking wine
1 tablespoon extra virgin olive oil
1 Salt, red pepper and black pepper to taste

Recipe Directions for Alternative Picadillo

Fry onions, peppers, carrots and garlic in a little olive oil until they begin to sweat. Add the meat and cook until just a bit of pink is left. Stir in the tomatoes. Add salt and pepper, olives, raisins, capers and wine. Cover and cook slowly until tender. Serve with rice and fried plantains, or stuff into Moyettes.
