Recipe Ingredients for Al's veggie soup

2 cups vegetable broth
2 cups water
14 1/2 ounce diced tomatoes
1/2 cup sliced carrots
1/2 cup sliced parsnips
1 cup green beans
1 cup sliced mushrooms
1 cup diced celery
1/2 cup diced potato
1/4 cup chopped onion
1/4 cup fresh parsley
1 tsp. fresh thyme
1/2 tsp. salt
1/2 tsp. pepper

Recipe Directions for Al's veggie soup

  1. Stir together all ingredients in a large pot and bring to boil

  2. Reduce heat to simmer and cook until all veggies are tender, about an hour
