Recipe Ingredients for Al's Veggie Chili

1/4 cup olive oil
4 cloves garlic
1 large onion, chopped
3 stalks celery, sliced
1 yellow squash, cubed
1 zucchini, cubed
1 cup mushrooms, sliced thickly
1 green pepper, chopped
1 red pepper, chopped
2 tablespoons chili powder
2 tablespoons ground cumin
1 teaspoon cayenne
1 teaspoon oregano
1/4 teaspoon sugar
1/4 cup bulgur wheat
12 oz. kidney beans (canned)
12 oz. garbanzo beans (canned)
12 oz. black beans (canned)
12 oz. corn (canned)
14 oz. whole tomatoes (canned)
1 cup tomato paste
1 cup red wine

Recipe Directions for Al's Veggie Chili

  1. Soak the bulgur wheat in 1 cup boiling water.

  2. Saute in a large pot: olive oil, garlic, chopped vegetables, spices, and sugar.

  3. Add: bulgur wheat, beans, corn, tomatoes, tomato paste, and wine.

  4. Simmer till veggies are tender and chili thickens.
