Recipe Ingredients for Al's Homemade Turkey & Veggie Lasagna

4 ounces whole wheat lasagna noodles
15 oz part-skim ricotta cheese
2 c part-skim mozzarella cheese
32 oz spaghetti sauce
1 onion
1 bell pepper
1 jalapeno pepper
1 zucchini
2 eggs
1/4 c parmasan cheese
1 lb turkey italian sausage
1 c sliced tomatoes

Recipe Directions for Al's Homemade Turkey & Veggie Lasagna

Spread about 1 C pasta sauce on bottom of 13x9" pan. Layer 4 lasagna noodles. Mix ricotta, eggs, parmasan, and 1/4 C mozzarella with some red pepper flakes and itallian seasoning plus extra parsley. Spread half of this mixture on the noodles. brown sausage without casings with onions, peppers, and zucchini. When brown and crumbly, add half of this mix to the top of the ricotta mix. Top with mushroom slices. Sprinkle w/ mozzarella and top with the rest of the 1st bottle of sauce. Repeat: noodles, ricotta, meat, slices of mushrooms, sauce, and cheese. Cover with foil, bake @ 375 for 45 min, remove foil and bake another 15 min. Let it rest for 10 minutes before serving.
