Recipe Ingredients for Alpisa Bran Muffins

1 1/2 cups Wheat Bran
1/2 cup boiling water
1/4 cup vegetable shortening
1 1/4 cup flour
3/4 cup sugar
1 egg
1 cup buttermilk
1 1/4 tsp baking soda
1/2 tsp salt

Recipe Directions for Alpisa Bran Muffins

  1. In a small bowl pour boiling water over roughly 1/3 of the bran (1 or 2 cups).

  2. Melt shortening in microwave and add melted shortening to the bran.

  3. In a large bowl (mixer probably) mix the rest of the bran, sugar, eggs and buttermilk.

  4. Sift flour, soda and salt into a third bowl.

  5. Add the contents of the two small bowls to the large bowl and mix thoroughly

  6. Batter keeps up to six weeks stored in refrigerator.

  7. Preheat oven to 400 F.

  8. 7. Transfer batter into greased muffin pan, fill cups to roughly 2/3 capacity.

  9. 8. Bake at 400 F for 20 minutes.
