Recipe Ingredients for Aloo Jhinge diye Posto

1 cup red potatoes, cubed
2 cups gourd, cubed
1 tbsp canola oil
1/4 cup poppy seeds
1/4 cup onion, chopped
1/4 tsp cayenne pepper
1/2 tsp turmeric
1/4 tsp fenugreek seed
1/4 tsp salt

Recipe Directions for Aloo Jhinge diye Posto

  1. Roast the poppy seeds till just changing color. Let cool. Dry grind till fine. Soak in water and keep aside.

  2. Steam the potatoes and star gourd cubes in the microwave for about 3 minutes or till they are fully cooked.

  3. In a wok heat the oil. Add fenugreek seeds and some pieces of red chillies. After half a minute add the onions and saute till soft. Add the boiled vegetables, turmeric, cayenne pepper and salt. Stir for a minute or so.

  4. Add the poppy seed paste. Stir till well mixed. Add 2 tbsp of water. Cover and cook for 3 more minutes. Serve hot with rice or roti.
