north indian potato and cauliflower curry

Recipe Ingredients for Aloo Gobi

400 g cauliflower
300 g potato
30 g ghee
100 g onion
30 g garlic
20 g cumin
10 g ginger
10 g coriander
10 g mustard seeds
5 g turmeric
5 g salt
50 g yogurt

Recipe Directions for Aloo Gobi

  1. fry onion in ghee until soft, 10-15 minutes

  2. add turmeric, garlic, cumin, coriander powder, mustard, chili and cilantro stems chopped finely (any of these can be ommited except cumin maybe)

  3. fry for 2-3 more minutes over moderate heat

  4. add cauliflower and potato cubed

  5. stir

  6. add water

  7. boil under medium heat until potatos are done (15 minutes?)

  8. add yoghurt and cilantro leaves chopped

  9. add garam masala to taste
