Punjabi-style cauliflower and potatoes with ginger

Recipe Ingredients for Aloo Gobi (less fat version)

1 lb. potatoes
2 lb. cauliflower
4 tbs. sunflower oil
1 tbs. ginger, minced
1/4 tsp. turmeric
1 tsp salt
1/4 tsp cayenne pepper
1 tsp cumin
1 tsp coriander
2 tbs. fresh cilantro

Recipe Directions for Aloo Gobi (less fat version)

  1. Peel the potatoes and cut into 2x1x1 inch pieces. Cook in boiling water for 5-8 minutes, until tender. Drain and set aside.

  2. Cut the cauliflower into delicate florets and blanch in 4 quarts boiling salt water, for 3-4 minutes, until the florets are tender. Drain and run under cool water. Set aside.

  3. In a large pan, heat oil on medium-high heat. When the oil is hot, add the ginger. Stir for 10 seconds.

  4. Turn down to medium heat and add the potatoes and cauliflower. Cook for 5 minutes, until they are lightly browned.

  5. Add turmeric, salt, cayenne, cumin and coriander. Stir gently to coat the vegetables with the spices. Add 1/4 cup water, stir once and cover the pan.

  6. Turn the heat to low and let simmer for 4 minutes.

  7. Add cilantro and toss gently. Serve hot.
