Spicy cauliflower, potatoes, and tomatoes

Recipe Ingredients for Aloo Gobhi Masala

1/5 c. olive oil
1 t. cumin seeds
1 T. ginger paste
605 g. potato
1 t. garlic
1/4 t. salt
1/2 t. turmeric
1 head cauliflower
685 g. tomato
2 t. garam masala
2 T. freshly chopped coriander

Recipe Directions for Aloo Gobhi Masala

  1. Put oil and cumin seeds in wok. Heat until seeds dance.

  2. Add ginger and garlic. Cook one min. over med. heat.

  3. Add potatoes cut into bite-size pieces. Cover and cook over low to med. heat for 3 min.

  4. Add turmeric and salt. Cook 3 more minutes. Remove potatoes with slotted spoon.

  5. Add cauliflower to wok. Cover and cook until crispy tender.

  6. Put potatoes and chopped tomatoes in. Cover and cook 10-15 minutes. If there's too much liquid, remove lid and turn up heat to dry veggies.

  7. Stir in dry masala and stir. Pour into serving dish and top with coriander.
