A nearly vegetarian frittata with some shrimp tossed in. Although technically a frittata, there's not quite enough eggs. *Note: Make sure to use a pan with a metal handle; plastic will melt in the oven.

155 g cooked shrimp
160 g smart ground
80 g okra
233 g eggs
80 g corn
1 tsp extra virgin olive oil

Recipe Directions for Almost-Vegetarian Almost-Frittata

  1. Chop the okra into rounds, and preheat the oven to 375*F.

  2. Pour the olive oil into a non

  3. Cook the smart ground in the skillet according to directions on package, adding in the other ingredients as you stir. If necessary, add in a bit of water to keep the ingredients from sticking and burning.

  4. Cook the mixture for about 5 minutes on medium-low, stirring for the first 2.

  5. Wrap the handle of the skillet in foil.

  6. Place in the oven for 12 minutes, or until the center is set.
