I adapted this from her first book, "Thirty Minute Meals". Her original version is great, but it has too much meat in it and not enough veggies. I make this to feed my family of 3, plus lunch the next day.

Recipe Ingredients for Almost Rachael Ray's Goodness Gracious...Goulash

1/2 pound elbow macaroni, cooked
1/3 pound beef, ground, lean
1/4 yellow onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1/2 teaspoon cumin, ground
1 1/2 teaspoons paprika
1/4 teaspoon nutmeg, ground
8 ounces tomatoes, crushed
2 tablespoons yogurt, plain

Recipe Directions for Almost Rachael Ray's Goodness Gracious...Goulash

Follow her instructions from the book, page 155. When you add the onion, add the carrots and celery, too. You could also add zuccini, green and or red peppers, parsnips, and frozen vegetable medley if you want more veggies. Up the tomatoes if you do. Oh yeah, she tosses her pasta with butter, parsley, and caraway seeds. I don't.
