Banana muffins that have less than one gram of fat per muffin and relatively low calorie too! Flax adds fiber and sun crystals help lower sugar.

Recipe Ingredients for Almost Nonfat Banana Muffins

1 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup banana, mashed
1/8 cup brown sugar
1/4 cup nonfat yogurt vanilla
1 egg
1/2 teaspoon vanilla extract
1/4 tsp cinnamon
1/4 tsp cloves
1 tbsp flax seeds
4 servings (pkg) sun crystals

Recipe Directions for Almost Nonfat Banana Muffins

  1. Preheat oven to 350 F

  2. Line muffin cups with paper liners.

  3. Mix flour, baking powder, baking soda, and salt.

  4. In a separate bowl, add bananas, yogurt, suncrystals, vanilla, splenda, and sugar. Mix well.

  5. Beat egg and add to banana mixture.

  6. Add banana mixture to flour mixture and beat well.

  7. Evenly place in muffin cups.

  8. Bake for about 10-15 mins until knife placed in middle of muffin comes out clean.
