Recipe Ingredients for Almost Good For You Cookies

1 cup butter
1 egg
1/2 cup fat free plain yogurt
1 medium banana
1/2 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla
4 tablespoons soy flour
4 tablespoons flax meal
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup flour
1 cup whole wheat flour
1/2 cup chopped dates
1 cup raisins
1 cup chopped almonds
3 cups oats

Recipe Directions for Almost Good For You Cookies

  1. Cream butter, egg, yogurt, banana, sugars and vanilla.

  2. Add soy flour, flax meal, baking soda and salt and mix well.

  3. Add the flours and mix well. The mixture will be very firm.

  4. Add dates, raisins and nuts and mix well.

  5. Add oats and mix well.

  6. Make balls about 1/2" across and place on cookie sheet. Flatten slightly with your fingers.

  7. Bake for 8 minutes at 325 degrees.
