Recipe Ingredients for Almost Fat Free Pumpkin Spice Bread

2 cups sugar
2 cups canned pumpkin
1/2 cup plain yogurt
1/2 cup apple sauce
4 large egg whites
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon allspice
1 teaspoon ginger
1/2 teaspoon cloves
1 1/4 teaspoons salt
1 teaspoon baking soda
1 cup walnuts

Recipe Directions for Almost Fat Free Pumpkin Spice Bread

  1. Preheat oven to 350 degrees.

  2. Combine first 5 ingredients in a bowl.

  3. Combine flour, spices, salt, and baking soda in a bowl and stir with a whisk of fork.

  4. Add dry ingredients to the pumpkin mixture and stir just until mixture is fully moist and flour is incorporated.

  5. Spray two loaf pans with cooking spray and divide batter evenly among them.

  6. Bake for 1 hr 15 mins or until a toothpick stuck in the center of each loaf comes out almost clean, with just a few crumbs.

  7. Cool 10 mins on wire rack, then remove loaves from pans and cool completely on rack.

  8. Extra loaf can be frozen after completely cooled. To freeze wrap the loaf in 2 layers of plastic wrap followed by 2 layers of foil to prevent freezer burn. To thaw just place the loaf all wrapped up on the countertop overnight.
