Light version of chicken-spinach alfredo, using spaghetti squash

Recipe Ingredients for Almost Alfredo

2 Laughing Cow Garlic & Herb Light Cheese Wedges
4 tsp. light sour cream
6 tsp. parmigiano-reggiano cheese
2 oz. frozen spinach
1 chicken breast
1 1/2 lbs. spaghetti squash (cooked)
1 salt to taste

Recipe Directions for Almost Alfredo

  1. Season chicken breast

  2. Cook in a skillet, using 0-calorie, butter-flavored spray

  3. Blend cheeses and sour cream, warming in microwave if needed; salt to taste

  4. Defrost spinach in microwave, subsequently pressing out excess water with a paper towel

  5. Combine all ingredients, including cooked squash, in a medium sized bowl
