Add 1/2 teaspoon of Splenda if desired. Serve with Walden's pancake syrup.

Recipe Ingredients for Almond Puff Pancakes

2 eggs, separated
1/4 cup milk, skim
1/2 cup almond meal
1/4 teaspoon baking powder

Recipe Directions for Almond Puff Pancakes

  1. Mix egg yolks, mil, sweetener and salt until smooth.

  2. In a small bowl, whisk the almond meal and baking powder.

  3. Whisk into yolk mixture until smooth.

  4. Beat egg whites until soft peaks form.

  5. Stir 1/4 egg whites into egg mixture. Fold in remaining egg white.

  6. Heat griddle and spray with Pam.

  7. Form pancakes using 1/4 cup for each.

  8. Cook for 3 minutes and then gently turn over and cook for

  9. 2 minutes.

  10. Enjoy!
