A yummy version of traditional mashed potatos

Recipe Ingredients for Almond Potato Puff

3 lbs potatos
2 small onions, chopped
4 tbl butter
4 eggs
1 1/2 cup whipping cream
1 cup almonds, ground
1 dash nutmeg
1 tsp salt
1 cup cheddar cheese, shredded
1/2 cup almonds, slivered

Recipe Directions for Almond Potato Puff

  1. Cook potatoes; drain. Put in mixing bowl.

  2. Saute onion in butter, add to potatoes.

  3. On low speed, beat eggs into potatoes until smooth.

  4. Beat in cream.

  5. Add ground almonds, salt, nutmeg.

  6. Spoon into baking dish

  7. Sprinkle with Cheese and slivered almonds

  8. Bake, uncovered, at 400* for 20/35 min.
