Low-carb, gluten- and dairy-free (yet delicious!) breakfast porridge with no added sugar.

Recipe Ingredients for Almond Porridge

1/4 cup Soymilk Unsweetened
1/2 cup Almond Meal/Flour
1/4 teaspoon ground cinnamon
1 pinch salt
1 medium (7" to 7-7/8" long) Bananas
1 large Egg, Whole
1/2 tsp Vanilla Extract

Recipe Directions for Almond Porridge

  1. Mix almond meal, soy milk in microwave-safe bowl. Mash banana into mixture, then beat in the egg and add vanilla, cinnamon and salt.

  2. Microwave for 55 seconds, then use a spoon to pull cooked porridge from edges of bowl to the center, and microwave again for another 45 seconds. Continue until you reach your desired consistency. Add butter, milk, berries to taste.
