A gluten-free alternative to Aussie bites.

Recipe Ingredients for Almond poppy seed muffins

6 oz Greek, Non-Fat, Plain Yogurt 1/2 cup
1/4 c DaVinci sugar free syrup - cookie dough flavor
2 egg whites (originally 2 eggs)
1 tsp almond extract
2 c Blanched Almond Flour
1/2 c flax meal
1/4 tsp salt
1/2 tsp baking soda
2 T poppy seeds

Recipe Directions for Almond poppy seed muffins

  1. Preheat your oven to 350 degrees F.

  2. For the muffins:

  3. Combine all remaining dry in ingredients and blend well.

  4. Combine the wet ingredients and blend well with a whisk.

  5. Add the dry ingredients and whisk thoroughly (get rid of any clumps of flour), or blend with a mixer.

  6. Fill muffin or cupcake liners about 3/4 of the way with batter. Grease muffin pan if not using liners.

  7. Bake for about 20 minutes for regular size (10-12 for mini muffins - my preference!), or until a toothpick inserted in the center of a cupcake comes out clean.

  8. Cool and enjoy! Store for a few days at room temperature (covered) or keep in the refrigerator for a week or so.
