Delicious chewy bars, modified because of a peanut allergy and to add protein. May substitute other fruits or nuts.

Recipe Ingredients for Almond-Oat-Soy-Cherry granola bars

300 g quick oats
150 g low fat soy flour
200 g raw almonds
75 g Coconut Chips Unsweetened
150 g semisweet chocolate chips
150 g Dried cherries
1/2 tsp salt
3/4 tsp ground cinnamon
175 g SoyNut Butter
2 tsp vanilla extract
50 g unsalted butter
100 g canola oil
240 g honey
4 tbsp water

Recipe Directions for Almond-Oat-Soy-Cherry granola bars

  1. Preheat oven to 350 degrees F. Grease two 9x9 inch pans with cooking spray. Cut a rectangle of parchment paper to line the bottom and two sides of the pans, leaving a little overhang. Lightly spray the parchment paper.

  2. Put almonds in food processor, coarsely chop.

  3. In a very large bowl, stir together the oats, soy flour, sugar, almonds, coconut chips, chocolate chips, dried cherries, salt, and cinnamon.

  4. In a large microwave bowl, melt the butter. Whisk in honey, soy butter, canola oil, vanilla extract, and water.

  5. Pour the wet ingredients over the dry ingredients (second person pouring helps here), stirring constantly to mix until it is evenly moistened. Transfer to the prepared pans, pressing mixture firmly into all corners. (Cover with plastic wrap first or spray hands with nonstick spray to reduce sticking.)

  6. Bake the bars for 25-35 minutes or until they're brown around the edges and just beginning to color on top. Rotate pans half way through if your oven cooks unevenly. The mixture will seem soft and almost underbaked if you press on it, but it will set as it cools.

  7. Place the pans on a rack and allow to cool completely in the pan. When cool, run a sharp knife around the edges of the pan, then pull up the parchment paper to lift the sheet of bars out of the pan. Cut the bars into 2x4 inch rectangles, or squares, or whatever you want.

  8. Note: If they crumble during the cutting process, refrigerate in the pan for about 30 minutes and try again.

  9. Storage: One to two in a snack size zip bag and freeze, then 3-4 bars in a food saver vacuum bag. Good to take to work for a snack.
