A spicy curry with Almond Milk substituted for coconut milk.

Recipe Ingredients for Almond Milk Yellow Curry

5.5 fl oz Vanilla
2 breast, bone and skin removed Chicken, Breast, Meat Only
2 cup Chicken Broth
1 medium White Onion
1 medium Yellow Hothouse Bell Pepper
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium Green Bell Pepper
6 tbsp Curry Powder
0.33 cup Peas, Green
2 tbsp Butter
2 tsp Pepper, Black
1 tsp Chili Powder
1 tsp Sea Salt

Recipe Directions for Almond Milk Yellow Curry

Chop all vegetables into chunks, and sauté in a large pot with the 2 tbs butter until soft. Add chicken stock and almond milk and bring to a boil. Add the chopped up chicken breasts and spices. Boil for 10 minutes, then reduce heat to medium and simmer for 1 hour. Serve with brown rice.
