Almond Milk Recipe

For whiter and smoother milk, first blanch the almonds. This recipe is easily doubled or tripled. It?s great as a drink by itself, in shakes, or smoothies, or as a base for soups and sauces. Makes 2 cups

Recipe Ingredients for Almond Milk

1/2 cup Raw Almonds
2 cups Water, Purified
1 pinch of Stevia Powder or Splenda (optional)

Recipe Directions for Almond Milk

  1. To blanch the almonds, place them in a small sauce pan and cover them with water.

  2. Bring to a boil and drain.

  3. Carefully slip off their skins and dry well.

  4. Place almonds in a blender and grind to a fine powder.

  5. Add a cup of water and Stevia or Splenda (if using) and blend 1 to 2 minutes.

  6. Continue blending and slowly add another cup of water.

  7. Blend 2 minutes.

  8. Pour liquid into an airtight, glass container.

  9. It will keep in the refrigerator 3-4 days.
