Original recipe used walnut oil instead of safflower oil and pure dark maple syrup in place of molasses. I use half molasses and half agave nectar but recipe analyzer wouldn't recognize agave (it is similar in calories and sugar count to molasses)

Recipe Ingredients for Almond Jam Cookies

1 cup almonds, ground
1 cup rolled oats
1 cup barley flour
1/4 tsp cinnamon
1/2 cup safflower oil
1/2 cup molasses
1 teaspoon vanilla
1/2 teaspoon almond extract
2 tablespoons raspberry jam

Recipe Directions for Almond Jam Cookies

  1. Preheat oven to 350.

  2. In food processor, grind oats, add rest of dry ingredients and blend until mixed well.

  3. In large bowl, combine wet ingredients except jam.

  4. Mix dry and wet together.

  5. Form into balls (I use small dough scoop

  6. Press thumb into center and fill indentation with small bit of jam.

  7. Bake 10-12 minutes until slightly browned.
