Adapted from something I found at http://www.diabetesdaily.com/forum/recipes/37754-almond-flour-bread , I bring you Almond Bread! I'm not sure how accurate the nutritional information is because it recognized almonds, but not almond meal or almond flour.

Recipe Ingredients for Almond Flour Bread

5 cups Almond Meal
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon of apple cider vinegar
3 tablespoons honey
6 eggs

Recipe Directions for Almond Flour Bread

  1. Combine almond flour, salt, and baking soda in a bowl. In another bowl, whisk eggs and then add the honey and vinegar.

  2. Stir the wet ingredients into the dry. Pour into a well-greased loaf pan. The batter should be sticky, so you might have to smooth it out in the loaf pan with a rubber spatula.

  3. Bake at 300 for 45-55 minutes or until an inserted knife comes out clean. [Keep in mind that this was the cook time for the half recipe. I don't know how long the doubled recipe will take, but probably not double the time. Check at 45 minutes just in case.] Let the bread cool and then slice fairly thin. The bread tastes better and toasts better when cut thinly.
