Mildly sweet and savory, and gluten free. This delicious nutritious bread is good for any meal, as a snack by itself, or a perfect energy snack before or after a workout. To reduce the calories leave out the honey and olive oil. You can boost the recipe with some mixed nuts or seeds, fresh & raw of course!

Recipe Ingredients for Almond & flax meal bread [gluten free]

1 cup almond meal
1 cup flax meal
1/2 t salt
1/2 t baking soda
1 tablespoon honey
1 tablespoon splenda
1 tablespoon olive oil
3 eggs
1/4 cup water
1/4 teaspoon vanilla flavoring

Recipe Directions for Almond & flax meal bread [gluten free]

  1. Preheat oven to 350 degrees. In a large bowl mix flax meal, almond meal/flour, salt, baking soda

  2. In a smaller bowl combine eggs, oil, water, honey,vanilla flavoring and splenda

  3. Stir wet ingredients into dry

  4. Allow batter to sit for 1-2 minutes to thicken

  5. Grease a 6.5" x 4" loaf pan and pour/scoop batter into pan.

  6. Bake at 350 for 30-35 minutes, half way thru at the 15 minute mark turn your pan so both ends get the same amount of heat. Gas stoves are notorious for being hotter at the back than the front.

  7. Cool and serve
