Almond Feta cheese that taste like cream cheese without the dairy.

Recipe Ingredients for Almond Feta Cheese

1 c. blanched almonds
1/4 c. lemon juice
3 tbsp. olive oil
1/4 cup olive oil
2 tbsp. garlic
1 1/2 tsp. salt
1 1/2 tsp fresh thyme
1 1/2 tbsp. rosemary leaves

Recipe Directions for Almond Feta Cheese

  1. Place almonds in a bowl, and cover with water. Let soak 24 hrs. Drain, run under cold water, and drain again.

  2. Puree almonds, lemon juice, 3 Tbsp. olive oil, garlic and salt until very creamy (5-6min). You may need to add 1/4 cup cold water during pureeing if mixing is difficult.

  3. Prepare a triple layer of cheese cloth. Spoon almond puree into cheese cloth, twisting the cloth around the cheese and squeezing to drain moisture. Tie cheesecloth with twine, and refrigerate for 12 hours.
