Almond Crusted Salmon Recipe

Great flavor, and not to mention super healthy. Should not take more than 30 minutes to prepare. Rice will take the longest.

Recipe Ingredients for Almond crusted salmon

3 oz salmon
4 spears asparagus
1/4 c brown rice
3 almond

Recipe Directions for Almond crusted salmon

  1. Spray a non stick pan with fat free olive oil spray

  2. Season 3 oz of salmon with ground black pepper and a little garlic

  3. In a blender blend 3-6 kernels of almonds and then spread on a plate.

  4. coat one side of the salmon with ground up almonds ( I like to put a little sprinkle of nutmeg in my ground up almonds for a little extra flavor).

  5. Place salmon in pan and squeeze a little lemon juice in pan, on the sides of the salmon.

  6. In a seperate pan put in asparagus spears after you've chopped them up to desired length. I like to sprinkle a little black pepper on them with some garlic powder.

  7. Sprinkle a little water on them for moister and make sure you're using a non stick pan.

  8. Put brown rice on in another pot. Prepare rice as per the directions on the side of the box/bag.

  9. Once done put the rice on a plate with the aspargus spears.

  10. Place salmon next to rice and squeeze a little extra lemon juice on top. Feel free to sprinkle left over almonds on top of salmon for some crunch.
