Yummy, somewhat healthier version of crispy fried chicken.

Recipe Ingredients for Almond crusted chicken

1 lb chicken
1/2 c flour
1 egg
1/2 c breadcrumbs
1/2 c almonds
1 T canola oil

Recipe Directions for Almond crusted chicken

  1. Cut chicken into strips, tenderloins, whatever size/shape you prefer.

  2. Place flour, whisked egg, and breadcrumb/almond mixture onto 3 plates or shallow bowls. (Use sliced or crushed almonds.)

  3. Dredge chicken pieces first in flour, then egg, then breadcrumbs, making sure to coat each piece thoroughly.

  4. Heat canola oil (or veg. or olive, your preference) over medium heat in a skillet.

  5. Sautee chicken pieces in oil about 3-5 mins each side, or until browned.
