Recipe Ingredients for Almond-Crusted Chicken Breasts

32 ounce boneless chicken breasts
1 egg
1 salt and pepper
1/2 cup (2 oz) freshly grated Parmesan cheese
1/2 cup (2 oz) almonds, finely chopped
6 tablespoons olive oil
1/4 cup flour
2 tablespoons shallots, minced
1/4 cup parsley, minced
1/4 cup (2 oz) white wine

Recipe Directions for Almond-Crusted Chicken Breasts

  1. Flatten chicken breats to an even thickness.

  2. In a shallow bowl, lightly beat the egg and season with salt and pepper. In another shallow bowl, mix the Parmesan and almonds together.

  3. In a frying pay over medium heat, add the olive oil. Dust the chicken with flour and dip in the egg, then in the parmesan mixture. Place breasts in the pan and cook, turning once, until golden brown. Transfer to a warmed platter. Season lightly with salt and pepper and keep warm.

  4. Pour off all but a light film of fat from the pan. Place over medium heat, add the shallots and parsley, and saute for 30 seconds. Add the wine and gradually whisk in the remaining oil to form a creamy emulsion. Season with salt and pepper. Spoon the sauce over the chicken breasts and garnish with lemon wedges. Serve immediately.
