2/3 cup brown long-grain rice
1 1/3 cups water
1 tbsp olive oil
1/3 onion, minced
1/4 cup almonds, chopped
1 medium apple, chopped
1/4 cup dried cranberries

Recipe Directions for Almond-Cranapple Rice Pilaf

  1. cook rice in water. bring to boil, then simmer on low covered for 40 minutes.

  2. caramelize chopped onion in skillet coated in olive oil. cook 10 minutes. add chopped almonds, cook 5-8 minutes more.

  3. mix cooked rice, onion, almonds, apple, and dried cranberries in medium bowl.
