this recipe uses maple syrup or brown rice syrup or agave instead of sugar You can fill the center with sugar free jam or a few chocolate chips

Recipe Ingredients for Almond Cookies

1 cup oatmeal
1 cup almonds
1 cup whole wheat flour (pastry)
1/2 cup oil
1/2 cup maple syrup
1/4 tsp salt
3/10 cup jam
1 tsp vanilla (or almond extract)

Recipe Directions for Almond Cookies

  1. Grind the oatmeal to a flour. Grind the almonds to a meal similar to cornmeal.

  2. Mix all the flours with the remaining ingredients except the jam.

  3. Roll 1 tbsp balls, flatten on cookie sheet and indent with thumb.

  4. Add 1/2 tsp of favorite sf jam or jelly to indent

  5. Cook at 350' for 12-15 min until edges are brown

  6. Cool on rack
