Recipe Ingredients for Almond Cookies

1 Egg white
1/2 cup sugar
1 1/4 cups ground almonds
1/4 tsp. vanilla
1/4 tsp. almond extract

Recipe Directions for Almond Cookies

  1. Preheat oven to 275 degrees. Line a large baking sheet with parchment paper (I use a silpat).

  2. With an electric mixer, beat egg white until foamy. Add the sugar, beating slowly until incorporated.

  3. Increase the mixer speed to high and beat until the mixture is glossy and holds stiff peaks. Gently fold in the almonds and extracts.

  4. Spoon the batter into little balls on a baking sheet leaving 2" between cookies. Flatten with a fork dipped in water.

  5. Bake for 18-20 minutes or until cookies are lightly golden.

  6. Keep in an airtight container for up to 5 days.
