Almond Chicken with Strawberry Balsamic Sauce served over spinach

Recipe Ingredients for Almond Chicken with Strawberry Balsamic Sauce

1/2 cup panko bread crumbs
1/3 cup almonds
1/2 teaspoon salt
1/4 teaspoon black pepper
16 ounce boneless skinless chicken cutlets
1 egg
1 cooking spray
3 teaspoons canola oil
1/4 cup shallots
1/3 cup strawberry preserves
1/3 cup chicken broth
3 tablespoons balsamic vinegar
1 tablespoon minced rosemary
9 ounces fresh spinach

Recipe Directions for Almond Chicken with Strawberry Balsamic Sauce

  1. Wash the chicken cutlets with egg.


  2. Place in a resealable plastic bag along with the bread crumbs, almonds, salt, and pepper and add the chicken cutlets one at a time then shake to coat.

  3. Coat a large skillet with butter-flavored cooking spray.


  4. Add 1 teaspoon of canola oil.


  5. Cook the chicken cutlets in the pan over medium heat for 4 to 5 minutes on each side.

  6. Remove the cutlets.

  7. In the same skillet, cook the shallots (chopped) in the remaining 2 teaspoons of canola oil until they are tender.


  8. Stir in the chicken broth (low-sodium is better), preserves (Polaner's All Fruit is even better nutritionally), vinegar, and rosemary. Bring this to a boil, reduce the heat, and simmer for 5 to 6 minutes until thickened.

  9. Meanwhile cook the spinach (frozen is okay, but try fresh) and drain it.

  10. Place the 1/4 of the spinach on a plate and then place a cutlet on top of the spinach bed. Place sauce on top.
