Almond Chicken Salad with Asparagus

Recipe Ingredients for Almond Chicken Salad with Asparagus

2 cup Asparagus
0.25 serving Mayo Light Mayonnaise
0.25 serving Fat Free Yogurt Plain
1 tsp Curry Powder
1 wedge yields Lemon Juice
1/4 tsp Sea Salt
1 dash Pepper, Black
2 cup, chopped or diced Chicken, Breast, Meat Only
0.5 cup, chopped Peppers, Sweet, Red
1/4 cup Coriander Leaves
10 almond Almonds
1 cup, shredded or chopped Lettuce, Iceberg

Recipe Directions for Almond Chicken Salad with Asparagus

  1. Steam asparagus for 2 minutes or until crisp-tender

  2. In a medium bowl, wisk together the mayonnaise, yogurt, curry, lemon juice and salt.

  3. Add asparagus, chicken, pepper, cilantro and almonds and toss to coat

  4. Serve on lettuce leaves
