A great low carb, high fat recipe for diabetics and anyone who is carbohydrate intolerant.

Recipe Ingredients for Almond Cheesecake

2 cups almonds
6 tbs butter
24 oz cream cheese
1/2 c sugar
3 large eggs
1/2 tsp almond extract

Recipe Directions for Almond Cheesecake

  1. Topping:

  2. Combine crushed or slivered almonds with melted butter, mix well.

  3. Press topping mixture into an ungreased 10 inch pan. Set aside.

  4. Filling:

  5. Beat softened cream cheese at high speed with an electric mixer until creamy.

  6. Gradually add sugar (or sugar substitute), beating well.

  7. Add eggs, 1 at a time. Beating after each addition.

  8. Stir in almond extract (you can use vanilla if you don't have almond).

  9. Pour into prepared crust.

  10. Bake at 375 for 35 minutes or until cheesecake is set. (The edges will start to crack and the center will still be firm.
