A delightfully light and moist cake with no flour. If you would like, you can substitute 4 servings of stevia powder for the honey and lower calories even more.

Recipe Ingredients for Almond Cake

3 large Egg, Whole
4 tbsp Honey, Strained Or Extracted
0.75 tsp Baking Soda
1 cup Blanched Almond Flour
3 Teaspoon Juice
0.33 serving Organic Apple Cider Vinegar
4 serving Sunflower Oil
2 serving Sea Salt

Recipe Directions for Almond Cake

Preheat oven to 350. Prepare an 8 inch round or square baking pan by lightly greasing, then lining the bottom with parchment paper to make it easier to take out the cake. Separate eggs; beat the whites with the vinegar until foamy. Beat the yolks with the honey, salt and soda. Add the lemon juice and oil and beat. Fold in the egg white mixture; then whisk in the almond flour. Pour the batter into the prepared baking pan. Bake for 25 minutes or until center is firm but springs back when touched. Let cool and serve with your favorite fruit topping.
