Recipe Ingredients for Almond Butter Chicken

1 onion, diced
2 tablespoons olive oil
1 lb chicken breast
8 oz. mushrooms, sliced
1 1/2 cups chicken broth
1 tablespoon thyme
1 teaspoon marjoram
1 pinch sage
1/4 teaspoon black pepper
1/3 cup almond butter
1 tablespoon white wine vinegar

Recipe Directions for Almond Butter Chicken

  1. Saute onion, chicken breast, and mushrooms in olive oil over medium-high heat until browned.

  2. Add spices, saute until fragrant.

  3. Dilute the almond butter with the chicken broth , and add to the pan.

  4. Bring pan to a simmer, stirring occasionally until most of the liquid has evaporated and the almond butter sauce is thick.
