Recipe Ingredients for Almond Breakfast Muffins

1/8 cup butter
1 egg
1/2 cup sugar
6 oz fat free yogurt
1/2 tsp almond extract
1 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/8 cup brown sugar
1/8 cup almonds, slivered
2 tsp cinnamon

Recipe Directions for Almond Breakfast Muffins

  1. Blend sugar and softened butter; add egg, yogurt, and almond extract and mix well.

  2. Mix together flour, baking powder, baking soda, and salt, and add in the wet ingredients.

  3. Lightly fold mixture of brown sugar, cinnamon, and almonds into batter; reserve some to sprinkle on top of muffins.

  4. Bake 25 minutes at 400.
